white bean dip

White bean dip

1 can cannellini beans
2 cloves garlic peeled
juice of 1/2 a lemon
salt and pepper to taste
8 or 10 sundried tomatoes
about 1/2 extra virgin olive oil
onion powder

Drain and rinse beans set aside. Finley chop the sundried tomatoes put in a bowl with boiling water. Just barely cover the tomatoes with the water. Let sit so the tomatoes can soak up the water.

Take garlic and chop in a food processor. Then add breans process till just mixed. Add salt and pepper, lemon juice and onion powder. Blend together and stream in oil. When blened well, check seasoning. Add half the sundried tomatoes and blend till the tomatoes are mixed in.

Put in a bowl top with the rest of the tomatoes and drizzle with some more extra virgin olive oil.

Serve with vegetables and or bread.

I'm adding this to my memories and probably going to make a small version to pack a couple of days for lunch this week (they'd go fantastically with the roasted red peppers I'm addicted to)- thanks! :)

A general question - sundried tomatoes I have a love/hate relationship with. Sometimes I find them to be good and other times I dislike them completely. Do you prefer to keep them around in oil or if not, what's a good brand or place to buy them?
